A journey to discover wine “the way it used to be made,” respecting traditions, the times dictated by nature and the life cycle of the vineyard, where caring for the soil is fundamental to growing a strong vine that can bear healthy, quality fruit.
The natural wines we will offer for tasting are certified organic and produced following the dictates of biodynamic agriculture. Harvesting is done exclusively by hand, fermentation is done using indigenous yeasts, final additions are very poor or completely absent, and sulfur dioxide is absent or present in minimal amounts.
The result of this delicate process is a unique wine, full of energy, full of life, completely reflecting the characteristics of the soil in which the vineyard was grown. It also turns out to be very digestible.
